Ingredients
- 8 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 1/4 cup heavy cream
- 2 tablespoons powdered sweetener (monk fruit or erythritol)
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest (plus more for topping, optional)
- 1/2 teaspoon vanilla extract
Instructions
- Let the cream cheese and butter sit at room temperature until softened.
- In a medium bowl, mix cream cheese and butter until smooth.
- Add heavy cream, sweetener, lemon juice, lemon zest, and vanilla extract. Mix until light and fluffy.
- Line a tray with parchment paper. Scoop bite-sized portions onto the tray using a spoon or small scoop.
- Optional: sprinkle extra lemon zest on top.
- Freeze for 1 hour or until firm.
- Store in an airtight container in the refrigerator. Serve chilled.
