Description
These blissful keto chocolate covered berry skewers are sweet, satisfying, and made with fresh berries and sugar-free chocolate. Perfect for Mother’s Day, spring picnics, or any time you want a quick low-carb dessert without turning on the oven.
Ingredients
-
10–12 fresh strawberries, hulled
-
½ cup fresh blueberries
-
½ cup fresh raspberries (optional)
-
1 cup sugar-free chocolate chips (e.g., stevia-sweetened)
-
1 tsp coconut oil (optional, for smoother melting)
-
Wooden skewers (6-inch)
-
Optional toppings: flaky sea salt, chopped nuts, shredded coconut
Instructions
-
Wash and dry all berries thoroughly. Moisture will prevent the chocolate from sticking.
-
Thread berries onto skewers, alternating strawberries, blueberries, and raspberries.
-
Melt chocolate with coconut oil in a microwave-safe bowl or using a double boiler. Stir until smooth.
-
Drizzle or dip skewers with melted chocolate. Lay on parchment-lined tray.
-
Add optional toppings before chocolate sets.
-
Chill in the fridge for 10–15 minutes or until chocolate is firm.
-
Serve cold or slightly softened at room temperature.
Notes
Store leftovers in the fridge in a single layer. Best enjoyed within 48 hours. For a vegan version, use dairy-free keto chocolate.
