These no-bake lemon and nut bliss balls are a quick, healthy snack bursting with fresh lemon flavor and packed with wholesome fats. Great for spring snacking, Easter brunch, or weekly meal prep—plus, they’re low-carb, vegan, and naturally sweetened.
Ingredients

1 cup macadamia nuts (140g)

1 cup unsweetened shredded coconut (90g)

2 tablespoons lemon zest (from 1–2 large lemons)

½ teaspoon vanilla extract

2 tablespoons powdered erythritol (or to taste)

3–5 tablespoons fresh lemon juice (strained)

1 tablespoon poppy seeds (optional)

Extra shredded coconut for rolling (optional)
Instructions

Blend dry ingredients: In a food processor, pulse macadamia nuts and shredded coconut until finely ground.

Add flavor: Add lemon zest, vanilla, erythritol, and 3 tablespoons lemon juice. If using poppy seeds, add now. Blend until combined.

Adjust texture: If too dry, add more lemon juice. If too tart, sweeten to taste.

Shape: With damp hands, roll 1 tablespoon of mixture into a ball. Optionally roll in extra coconut.

Chill: Refrigerate for at least 1 hour to firm up.

Store: Keep in an airtight container in the fridge for up to 2 weeks or freeze for up to 3 months.
