Description

This low carb bacon cheeseburger casserole is an easy, cheesy main dish that delivers all the flavor of a classic burger—without the bun. Great for keto meals, weeknight dinners, or holiday gatherings. Make it ahead, freeze it, or serve fresh for comfort food done right.


Ingredients

  • 1 lb ground beef
  • 6 slices bacon, chopped
  • 1 small onion, diced (optional)
  • 1 cup shredded cheddar cheese, divided
  • 4 large eggs
  • ½ cup heavy cream
  • 1 tsp mustard (yellow or Dijon)
  • Salt and pepper to taste
  • Pickles for garnish (optional)

Instructions

  1. Preheat oven to 350°F (177°C). Grease a 9×13-inch baking dish.
  2. In a skillet, cook bacon until crisp. Set aside on paper towels.
  3. In the same pan, brown ground beef with onion if using. Drain excess grease.
  4. Return bacon to skillet and stir to combine with beef.
  5. Spread beef and bacon into baking dish. Sprinkle half the cheese over the top.
  6. In a bowl, whisk eggs, heavy cream, mustard, salt, and pepper. Pour evenly over meat.
  7. Top with remaining cheese.
  8. Bake uncovered for 30–35 minutes, until golden and set.
  9. Let cool 5–10 minutes before slicing.
  10. Garnish with pickles if desired. Serve warm.
