Description
A festive red, white, and blue poke cake perfect for 4th of July, Memorial Day, or summer gatherings. Easy to make, fun to decorate, and always a hit.
Ingredients
- 1 box white cake mix (plus ingredients listed on box)
- 1 package red Jell-O (3 oz, strawberry or cherry)
- 1 package blue Jell-O (3 oz, blue raspberry)
- 2 cups boiling water (1 cup per Jell-O flavor)
- 1 tub whipped topping (8 oz, thawed)
- Fresh strawberries and blueberries (optional)
- Red, white, and blue sprinkles (optional)
Instructions
- Preheat oven and prepare cake mix according to package directions. Bake in a 9×13-inch pan.
- Let cake cool completely in the pan.
- Using a fork or skewer, poke holes across the cake surface, about 1 inch apart.
- Dissolve each Jell-O flavor in 1 cup boiling water (in separate bowls).
- Pour red Jell-O over half the cake, and blue Jell-O over the other half.
- Cover and refrigerate for at least 3 hours or overnight.
- Spread whipped topping evenly over the cake.
- Decorate with berries and sprinkles as desired. Serve chilled.
Notes
- Chill time is crucial for setting the gelatin properly.
- Decorate just before serving for the best appearance.
- Can be made a day in advance and stored covered in the fridge.
