These no-bake Scotcheroo Truffles are a cozy, keto-friendly treat made with peanut butter, sugar-free chocolate, and crushed nuts. Perfect for healthy snacking, spring brunches, or Easter dessert tables—quick, easy, and guilt-free.


Ingredients

For the Truffles:

  • 1 cup natural peanut butter (no sugar added)

  • ½ cup powdered erythritol

  • 1 teaspoon vanilla extract

  • ½ teaspoon caramel extract

  • 2 cups crushed nuts (macadamia, almonds, or pecans)

  • ¼ cup unsweetened shredded coconut

For the Chocolate Drizzle:

  • ½ cup sugar-free dark chocolate chips

  • 1 teaspoon coconut oil
