Description

This no-bake Strawberry Cream Delight is light, fruity, and layered with whipped cream cheese, fresh strawberries, and almond flour cookies. A perfect make-ahead spring or Easter dessert that’s gluten-free and low in sugar—great for family gatherings or everyday cravings.


Ingredients

Creamy Layer

  • 1 (8 oz) package cream cheese, softened

  • 1 cup heavy whipping cream

  • ¼ cup powdered sweetener (erythritol or allulose)

  • 1 tsp vanilla extract

Pudding Layer

  • 1½ cups unsweetened almond milk

  • ½ cup heavy cream

  • 2 tbsp powdered sweetener

  • 1 tsp vanilla extract

  • ½ tsp xanthan gum

For Layering

  • 1½ cups crushed almond flour cookies or low-carb biscuits

  • 1 cup fresh strawberries, sliced (plus extra for garnish)


Instructions

  1. Make the Creamy Layer

    • Beat cream cheese until smooth.

    • Add sweetener and vanilla, mixing well.

    • Slowly whip in heavy cream until thick and fluffy.

  2. Prepare the Pudding

    • Whisk almond milk, heavy cream, and vanilla.

    • Add sweetener. Sprinkle in xanthan gum while whisking.

    • Let sit for 5–10 minutes to thicken. Whisk again.

  3. Assemble the Layers

    • In small jars or a serving dish, layer:

      • Crushed cookies

      • Strawberry slices

      • Half of the cream mixture

      • Pudding

      • Repeat and top with remaining cream

  4. Chill and Serve

    • Refrigerate for at least 2 hours or overnight.

    • Garnish with extra strawberries and crushed cookies before serving.
